In an idyllic setting, you will have the opportunity to discover the art of cheese making, guided by passionate local masters. The experience is perfect for families with 2 children. During the workshop, one parent and one child will learn how to create delicious cheeses, using natural ingredients and traditional methods, while the other parent and the other child enjoy a cheese tasting. Here, the milk is processed on the farm and is produced for taste, not quantity. The cows are happy because they spend the spring-summer season in the wild, on pasture, producing milk only from herbs and spices! In winter, they are given natural fodder produced on the farm: hay, alfalfa, fodder beet and obroc. The quality of the cheese is directly proportional to the cows' feeding, the hygiene during milking, the quality of the milk and the passion with which we produce and care for the ripened cheeses.
Cheese is a typical product of the alpine areas of Switzerland, Germany and Austria. Centuries ago, peasants who went out with their cows on the alpine pastures did not have the daily opportunity to collect the milk in the valleys. So they started producing cheese. As time went by, they obviously succeeded in perfecting the production process.
Only one type of ripened cheese is produced in the workshop, out of the conviction that it is better to have a product whose quality you are convinced of than to have many mediocre ones. However, there is a wide range of varieties, with the addition of spices or wine, nuts and chilli.
What will you do in class? You will put yourself, for a couple of hours, in the cheesemaker's shoes. You will participate in the process of transforming milk into fresh cheese! In a space suitable for such exercises, we invite you and your friends or colleagues into the cool cellar where the magic happens.
The workshop will take place daily, by appointment in advance, in the cellar of the former evangelical parish church in Cund, during which each participant will make their own 3 wheels of cheese, which they can take home.
Sample program (can be adapted):
10:00 - Welcoming the participants and introducing them to the course topics
10:20 - Filling the boilers and starting to heat the milk
10:50 - Adding the rennet
11:00 - Cheese tasting
12:00 - Start cutting the coagulum, shaping and draining the curds
13:00 - End of the course, taking the cheese in molds and boxes, handing out the recipes and participation certificates
After the course you will still have enough skills to produce this healthy and tasty food at home. In addition to the three shapes for the cheese and the clotting rennet, you will receive instructions and recipes to help you at home if you want to repeat the experience.
During the course you will enjoy hot and cold drinks, with or without alcohol, acidified or non-acidified, and a cheese tasting. The brunch is composed of the farm's cheeses, fresh bread, vegetables, zacusca, salads and cold meats.
